Chocolate Chocolate Chip Muffins

Be prepared for your kids to ask you to make these chocolate chocolate chip muffins on repeat. We were trying to recreate Costco’s because I needed a healthier and smaller version for my kids. And we succeeded.

I made these on a Sunday afternoon. I gave a few to a neighbor, and by Monday morning they were gone and the neighbor I gave them to and the neighbor driving carpool were asking for the recipe because the kids were bragging about them on the way to school.

Chocolate Chocolate Chip Muffins

Prep Time 20 minutes
Cook Time 15 minutes

Ingredients
  

  • 1 3/4 cups flour
  • 4 tablespoon unsweetened cocoa powder
  • 4 tablespoon chocolate protein powder
  • 1 teaspoon vanilla extract
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cup milk chocolate chips
  • 3/4 cup salted butter room temperature, cut in pieces
  • 2/3 cups sugar
  • 2 eggs
  • 1 cup milk

Instructions
 

  • Set the oven for 400°F.
  • In a mixing bowl, combine all dry ingredients except sugar.
  • Add the chocolate chips to the dry ingredients.
  • In another mixing bowl, add butter and sugar. Mix well.
  • Mix the eggs into the butter mixture.
  • Add the dry ingredients alternating with the milk (dry, milk, dry, milk dry) until just combined, don’t over mix.
  • Bring out a muffin tray or a regular oven tray and line with muffin liners. Scoop out the batter in the muffin liners using two spoons, and top with chocolate chips of you want extra
  • Bake in the middle of the oven for 15 minutes. Use a tooth pick or cake tester to check when the muffins are finished.
