Method
Marinate the Chicken
- In a ziplock bag or shallow dish, combine the marinade ingredients:
- Add the chicken breasts to the bag and massage to coat evenly.
- Marinate in the fridge for at least 3 hours, or up to 24 hours for best flavor.
Tzatziki Sauce
- Grate the cucumber and use a clean towel or paper towels to squeeze out excess liquid.
- In a bowl, combine the drained cucumber with the Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper
- Stir well, cover, and refrigerate until ready to serve.
Cucumber Salad
- Dice your tomatoes, cucumber, and red onion.
- In a medium bowl, combine the tomatoes, cucumber, and red onion with red wine vinegar, garlic, olive oil, salt, and pepper.
- Toss everything together and set aside.
Cook the Chicken
- Preheat a grill, grill pan, or skillet over medium-high heat.
- Grill the marinated chicken for 2–3 minutes per side, or until fully cooked and golden.
- Let the chicken rest for 10–15 minutes, then slice into thin strips.
Assemble
- Warm the pita bread if desired.
- To each pita, add sliced chicken, a spoonful of cucumber salad, a generous dollop of tzatziki, and crumbled feta cheese.
- Fold and enjoy immediately!
Notes
When I am wanting a bowl instead of a gyro, I do everything exactly the same except I assemble over a bed of lettuce and skip the pita.
