Roasted Cherry Tomatoes and Burrata Dip Couples Cocktail Hour

Eric and I do a weekly couples cocktail hour every Sunday. It is basically drinks and appetizers but for homebodies. It is my favorite little ritual and like a weekly mini date with a lot less prep than one of my full fleged date night in ideas.

Appetizer:

This week I made a cherry tomato and burrata dip that tastes like a spicy margaraita pizza. It was so good.

Roasted Cherry Tomatoes with Burrata and Basil

This dish is the perfect blend of cozy and elegant. Sweet roasted cherry tomatoes bursting with flavor, melted Parmesan, and creamy burrata all come together to create the ultimate appetizer for Couples Cocktail Hour. Serve it warm with toasted baguette slices for dipping.
Prep Time 5 minutes
Cook Time 30 minutes

Ingredients
  

  • 2 cups cherry tomatoes
  • Olive oil
  • Salt pepper, and red pepper flakes (to taste)
  • 1 tbsp parsley chopped
  • 1 clove garlic chopped
  • 2 tbsp fresh basil chopped
  • ¼ cup grated Parmesan
  • ½ burrata cheese ball
  • Baguette sliced (toasted if desired)

Method
 

  1. Preheat oven to 425°F.
  2. In an oven-safe dish, combine cherry tomatoes, a drizzle of olive oil, salt, pepper, red pepper flakes, garlic, and parsley. Toss to coat evenly.
  3. Roast for 25–30 minutes, until the tomatoes are blistered and fragrant.
  4. Remove from the oven and stir in Parmesan, basil, and burrata until everything is creamy and combined.
  5. Serve warm with sliced (or toasted) baguette and enjoy!

Drinks:

Ingredients:

  • 2 oz tequila
  • 1 oz cranberry juice
  • Juice of 1 lime
  • Fresh jalapeño slices
  • Ice
  • Optional garnish: extra jalapeño slice or sugared cranberries

Directions:

  1. Add tequila, cranberry juice, lime juice, and a few jalapeño slices to a cocktail shaker filled with ice.
  2. Shake well until chilled.
  3. Strain into a glass filled with fresh ice.
  4. Garnish with a jalapeño slice (and cranberries if you like).
  5. Serve immediately and enjoy
