Greek Chicken Bowls

Hands down, Greek chicken bowls are one of my ALL time favorite meals. I have been making this one for a decade now and it is in our monthly rotation at least twice a month. It is so fresh and delicious. And the leftover make an amazing lunch.

There are 3 parts to this recipe which makes it look difficult but looks are deceiving.

Ingredients

Greek Chicken Gyros & Bowls

These Greek Chicken Gyros are fresh, flavorful, and perfect for an easy weeknight dinner or casual summer gathering. Juicy marinated chicken is grilled to perfection and tucked into warm pita bread, then topped with creamy homemade tzatziki, a crisp cucumber-tomato salad, and crumbled feta for the ultimate Mediterranean bite. Serve everything build-your-own style for a crowd-pleasing meal that feels both relaxed and satisfying.

Ingredients
  

  • 1 lb chicken breasts

Marinade

  • 1 spoonful jarred garlic
  • 1 tbsp red wine vinegar
  • 3 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 3 tbsp Greek yogurt
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • Black pepper

Tatziki Sauce

  • 1 large cucumber
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 spoonful jarred garlic
  • 1/4 tsp salt
  • Black pepper

Cucumber Salad

  • 2 tomatoes dice
  • 1 cucumbers diced
  • 1/2 red onion diced
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp garlic
  • 2 tbsp olive oil
  • Salt and pepper

To Serve

  • 6 pita bread
  • feta cheese

Instructions
 

Marinate the Chicken

  • In a ziplock bag or shallow dish, combine the marinade ingredients:
  • Add the chicken breasts to the bag and massage to coat evenly.
  • Marinate in the fridge for at least 3 hours, or up to 24 hours for best flavor.

Tzatziki Sauce

  • Grate the cucumber and use a clean towel or paper towels to squeeze out excess liquid.
  • In a bowl, combine the drained cucumber with the Greek yogurt, lemon juice, olive oil, garlic, salt, and pepper
  • Stir well, cover, and refrigerate until ready to serve.

Cucumber Salad

  • Dice your tomatoes, cucumber, and red onion.
  • In a medium bowl, combine the tomatoes, cucumber, and red onion with red wine vinegar, garlic, olive oil, salt, and pepper.
  • Toss everything together and set aside.

Cook the Chicken

  • Preheat a grill, grill pan, or skillet over medium-high heat.
  • Grill the marinated chicken for 2–3 minutes per side, or until fully cooked and golden.
  • Let the chicken rest for 10–15 minutes, then slice into thin strips.

Assemble

  • Warm the pita bread if desired.
  • To each pita, add sliced chicken, a spoonful of cucumber salad, a generous dollop of tzatziki, and crumbled feta cheese.
  • Fold and enjoy immediately!

Notes

When I am wanting a bowl instead of a gyro, I do everything exactly the same except I assemble over a bed of lettuce and skip the pita.
