Bacon Wrapped Dates with Goat Cheese

The first thing I need us to accept is that I’m terrible at photography (especially food photography) and maybe one day I will hire a photographer, but I’m not at that level yet, so for now we let the videos and recipes do the talking 😘

Eric and I do a weekly couples cocktail hour every Sunday. It is basically drinks and appetizers but for homebodies. It is my favorite little ritual and like a weekly mini date with a lot less prep than one of my full fleged date night in ideas.

Appetizer

Normally I love a good dip, but today I was wanting something new and a little lighter. I decided to try bacon wrapped dates with goat cheese and honey. I really liked them and Eric was neutral. So maybe don’t try them for the first time at a party, but still try them.

Bacon Wrapped Dates

Prep Time 5 minutes
Cook Time 10 minutes

Ingredients
  

  • 8 dates
  • goat cheese
  • 4 slices bacon
  • Honey hot honey would also be tasty

Method
 

  1. Preheat oven to 400
  2. Slice open and pit your dates
  3. Fill each date with goat cheese
  4. Cut the bacon in half or thirds
  5. Wrap the bacon around the cheese stuffed date
  6. Place on a parchment lined baking tray
  7. Drizzle with honey
  8. Bake for 10-15 minutes until bacon is crispy

Notes

You can use toothpicks to secure the bacon around the dates. I didn’t because I avoid extra steps at all costs and only one of them fell off.

Drinks

I had this with a spicy virgin margarita & Eric water (per his choice, cause he is boring right now lol)

Ingredients:

  • Juice of 2 limes
  • juice of 1 orange
  • Fresh jalapeño slices
  • 1 oz water
  • Sparkling water
  • Salt
  • Tajin
  • Ice
  • Optional garnish: extra jalapeño slice and lime wedge

Directions:

  1. Add lime juice, orange juice, 1 oz water and a few jalapeño slices to a cocktail shaker filled with ice.
  2. Shake well until chilled.
  3. Rim your glass with salt and tajin
  4. Strain into your glass filled with fresh ice.
  5. Top off with sparkling water
  6. Garnish with a jalapeño slice and a lime wedge
  7. Serve immediately and enjoy
